To avoid common problems some people mostly encounter with these baguettes, follow this standard advice procedure and you won't go wrong.
1. Stick to the recipe rigidly, the quantities are very important for successful results
2. Use scales for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate
3. Use proper white bread flour with at least 12% protein, check the ingredients list on the side of the flour bag, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour, plain or all purpose flour is not strong enough for making bread.
4. Check your yeast is working you can do a yeast test as shown in my sandwich bread video here hurun.info/to/vide/eZCgtZiPt2uXw8k.html

I have made this several times and it alway comes out beautifully and freezes extremely well. We eat it way too fast, but can't stop when it's hot and fresh out of the oven! I've used your name on Facebook and have a group of friends who will probably be checking you out.

Is there a way to prove the dough faster than 4 x45 mins and a bit of folding? Or a way I can leave it to prove and say, go out without having to interact with it every 45 mins? E.g leaving the dough overnight to bake in the morning ? Btw, tried full recipe last night and they came out beautifully.

The loaves will be twice the size so yeas you'll need to bake for longer, (about 30 mins same temp) but if this is your first attempt at baguettes, I strongly suggest you get used to the/any, recipe before altering it. I’ve made these many times now - they are perfect for so many things. Alone with butter, add cheese & broil and Any type of sandwich (perfect for meatball sandwiches - with olive oil / garlic and Italian herbs) We make these - cool completely- cut in half, wrap in double foil & freeze. To use preheat oven to 400 then turn off and place the foiled baguettes in for approx 20 min & wala! Thank you again for sharing your talent! This & many of your other recipes are fabulous 👍🏽👍🏽👍🏽

Great job, they look delicious. Here's a tip for anybody baking bread in a fan oven, like me, struggling with lack of oven spring. After you slash the baguettes, brush the scores with both water and oil. Oil will keep the scores moisturized for much longer after all the water has evaporated, resulting in bigger ears.

Houd je strikt aan het recept, de hoeveelheden en ingrediënten zijn erg belangrijk en zorgvuldig uitgewerkt voor succesvolle resultaten. 2. Gebruik digitale WEEGSCHALEN voor alle metingen inclusief het wegen van het WATER, IN GRAM, GEEN VLOEISTOF OUNCES, verander niet in kopjes of maatkannen, deze zijn te onnauwkeurig. probeer indien mogelijk flessenwater te gebruiken. Kraanwater bevat chloor en in bepaalde gebieden is het hoger dan in andere, waardoor de gist verzwakt of zelfs doodt. 3. Hello! I'm just getting into bread making and I find this video very helpful! My problem though is that I like to make fresh bread for my family in morning and I dont feel like waking up 4 in the morning to bake. Is there anyway to make this by doing some cold fermenting in the fringe through the night?

It never comes back the same from the fridge or freezer, even if you did refrigerate, they would take at least 2 to 3 hour tto get back to temp. The best way to do them is to make them when you can, then freeze, but freeze them soon as they have cooled from the oven, that way they stay very fresh, for breakfast, you can defrost in the microwave, on the defrost setting, it only takes a couple of minutes they even stay crispy that way. Thank you for replying! It’s very humid in Singapore so bread do go mouldy easily, that’s why I wouldn’t want to make so many at once. The freezing tip would work. Thank you so much!

Thanks for watching, much appreciated. It's not ideal halving these already small recipes, but if you must, half everything except the yeast, keep that the same, but it's much better to bake all 4 and freeze 2. The bread will stay fresh for 2 to 3 days depending on the ambient conditions of the environment they are kept in, but they won't stay crispy for more than 12 hours. The best way to preserve them is to freeze what you are not going to use straight away, but freeze them soon as they have cooled from the oven, that way they stay very fresh, you can defrost in the microwave, on the defrost setting, it only takes a couple of minutes they even stay crispy that way.

Thank you John for this wonderful recipe. I tried it and it came out really nice. The bread is so tasty and just chewy enough to be completely enjoyable. I will make this my baguette recipe. If I may say, I just wanted to point out that in this video you mention to "set the stove at 200 deg C / 400 deg F or gas mark 6" and on the links to view/print the recipe it is written " set the stove at 220°C / 430°F / Gas mark 7 to 8". Personnally I bake them at 430deg F and they came out perfect. Thank you for sharing your great recipes. Cheers from Canada!

I use a fan assisted oven in the video. Which runs hotter than indicated on the dial. Increase your temperature to 445°F/ 230°C next time, and you'll see a big difference in the results. You can use your oven as a proofing drawer. Set it to the ideal temperature as John stated, and put your bowl of dough in there. The plastic wrap won't melt. Hope this helps!

Thank you for the recipe video! I tried making this tonight, but sorry I did break your rule. I didn’t have any bread flour and I really wanted some baguettes, so I used all purpose. Still came out pretty good, although I’m sure it will be better with bread flour. Will get my hands on some vital wheat gluten next time. It’s a relatively lengthy process, but the texture and taste are worth the time. 👍 Can’t wait to try this again.

A spaghetti spoon works great for kneading dough, instead of sticky hands (if the phone rings). I’ve learnt that dry yeast needs atleast +37C hot water? Is that the reason it takes so long time to ferment? Smart to use flour on a baking sheet, for not soiling the cutting board. I keep kitchen clean by making dough in a 10L plastic bucket with a spaghetti fork. Both are very easy to clean.

@John Kirkwood Thanks. Try Rye sieve instead of wheat flower in bread. I also use unsweetened fruit muesli, sun seeds or walnuts and Persillade spices / garlic herb mix for food.

Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4.
